If you’re like most adults in the US, you start your day with a mug, glass, or gallon of coffee. Whether you’re a latte lady or more of a cold brew sipper, every cup of joe starts with beans. And if you’re drinking java daily (if not multiple times a day), it’s worth knowing where your beans come from to ensure you’re getting the healthiest and best-tasting brew possible.

Studies have found that coffee is a common source of mold mycotoxins, which, if consumed in large quantities, can be poisonous. We’re often exposed to mycotoxins, which are toxins produced by mold spores, from our environment and diet, so our bodies are prepared to defend us. Liver enzymes neutralize the toxins to prevent them from reaching unsafe levels in our blood. And though most coffee beans contain trace levels of mycotoxins, if you’re sensitive to mold or concerned about your exposure over time, you may want to seek beans that are third-party tested to be mold-free. I sampled several of the most popular mold-free and organic coffee brands to find the best-tasting, most reputable options for home brewers.

This is a single-origin light roast from Brazil. All coffee beans from Holistic Roasters are certified organic and sourced from family-run farms that use regenerative farming methods. The packaging is also fully recyclable. Rubicon is the brand’s lightest, most delicate offering, and I loved the lightly floral, fresh-tasting flavor. These beans were great for cold brew and espresso; they’re smooth and refreshing, not overly bitter or tannic.

Purity Coffee’s Flow beans are a medium roast option of 100% organic Arabica coffee. The brand provides certifications of the beans’ contaminant and nutrient profiles from a third-party lab. All Purity coffees are certified organic and tested to ensure no mold or myocotoxins. They’re also certified Bird Friendly by the Smithsonian, which means they’re sourced from farms that accommodate birds’ natural habitats. These beans are grown in the shade, which is better for the soil, the coffee plants, and helps preserve the nutrients in your morning joe. Purity Flow is a rich-tasting, chocolaty brew with slight fruitiness. I loved it brewed in a French press with a splash of cream, but don’t just take it from me, this product also has nearly 9,000 5-star reviews; people love it.

Seek also makes decaf and canned iced coffee. Credit: Seek Coffee

If you’re looking for a lower-acid alternative for your morning americano, Seek’s beans may be for you. These organic non-GMO beans are mold-free and lower in acid and histamines than your average brew. The single-origin beans are grown in the shade in Mexico and hand-picked before they’re sun-dried and roasted using a process that preserves their natural antioxidants. These beans have a vibrant, bold flavor. I liked this coffee served in a cappuccino or latte; the brew could stand up to the richness of whole milk.

A low-acid medium roast brew. Credit: Lifeboost Coffee

Lifeboost beans are shade-grown, hand-picked, and sun-dried. The brand doesn’t disclose the specific farming location but says the beans are from Central America and grown at over 5,700 feet above sea level, which slows their growth and allows the beans to become more nutrient-dense and antioxidant-rich. The beans are third-party tested for mycotoxins and are low-acid. This is a smooth, robust medium roast that I recommend using in a French press, drip or pour-over, and lightening up with some dairy or non-dairy creamer.

Melk also has two brick-and-mortar cafes in Montreal. Credit: Melk Cafe

Melk is a Canadian-based coffee roaster with two cafes in Montreal. Its premium beans are sold DTC and wholesale. Minivan is the brand’s organic brew that’s used most in Melk cafes for both espresso and filter drinks. The medium-roast beans are a blend from Honduras and Colombia and are certified organic. They’re grown at over 1,000 feet of elevation, which is not quite as high and cool as some other options. This coffee is sweet and dessert-like. I love the rich chocolate notes and nuttiness that make this brew great for steamed milk drinks.
